Toasted oat porridge

Toasting the oats first gives a really nice flavour to this porridge.

Makes two (fairly susbtantial) servings

125g porridge oats
250ml water
250ml soya milk

2 tbsp agave syrup (or use maple syrup)
ground cinnamon (optional)
dried fruit to serve (optional)

Toast the oats in a dry pan for two minutes. Cool the pan down by holding it under the tap and running cold water down the outside (put the lid on first!). Add the water and bring to the boil, when it starts to go sticky add the soya milk, turn the heat down and cook until thick and creamy. Add a bit more soya milk if it goes too thick. Add the agave syrup and cinnamon or fruit before serving.
