Avocado, tomato and pesto mayo sandwiches

ripe avocados
tomatoes
vegan pesto
vegan mayonnaise
lemon juice
salt and pepper
nice bread such as panini, ciabatta or baguettes

Scoop out the avocado flesh and mash in a bowl with a squirt of lemon juice and a small amount of salt and pepper. Slice the bread open and spread some avocado mixture onto the bottom half and a thin layer of vegan pesto followed by a thin layer of vegan mayonnaise onto the top half. Slice the tomatoes and place in the middle, then cut the sandwiches into bite-size portions to serve.
