Nectarine and marzipan slice

This is one of my favourite desserts for making for guests. It looks and tastes impressive but is very quick to make and can be made up a few hours in advance and just put in the oven when you're ready for it.

Serves 6

1 sheet ready roll puff pastry
150g marzipan
2 nectarines
2-3 tbsp apricot jam

Unroll the pastry onto a sheet of greasproof paper and score a 2cm border around the edge. Roll the marzipan out and place inside the border. Slice the nectarines and arrange the slices in three lines down the length of the marzipan. Gently melt the apricot jam in a saucepan and spoon over the nectarines. At this point the slice can be kept in the fridge for a few hours and baked just before you are ready to eat.

Heat the oven to 200°c. Place the slice on a baking sheet and bake for 25 minutes. Serve warm with vegan cream or ice cream.
