Scotch pancakes

Not exactly a 'traditional' recipe, but still tasty! The banana adds nicely to the flavour without being overpowering.

For any North American readers: according to discussions I've had on food forums, Scotch pancakes are similar what you call pancakes, only smaller. What we call pancakes is what you call crepes.

Serves 2-3, depending how hungry you are!

225g flour
1 tsp baking powder
pinch of salt
25g sugar
250ml soya milk
3 tbsp vegetable oil
1 banana

Sieve the flour into a bowl and add the baking powder and salt. Blend the other ingredients together and mix into the flour to form a smooth batter.

Heat a frying pan and add small amounts of batter (aim for circular shapes of 8-9cm in diameter). Cook gently for a few minutes on each side. Serve with maple syrup, agave syrup, vegan margarine or jam.
